Zucchini Dal

Upon receiving request from one of my fellow bloggers to post a recipe for zucchini, I got an idea to tweak one of my usual dal recipe with zucchini. Zucchini belongs to the cucumber family and it has equivalent nutrition of what cucumber has. We can make many different food recipes using zucchini and today I am going to present one such easy quick recipe. Hope you enjoy it. 

Ingredients:

Zucchini – 2 cut into 1" piece
Onion – 1 medium
Tomato – 1 small
Green Chillies – 2 slit into half
Curry Leaves – few
Cumin Seeds – 1 tsp
Ghee/clarified butter – 1 tsp
**Sambhar powder – 1 tsp
Yellow Split Moong Dal – ½ cup
Salt – to taste
**Water – 3 cups
Coriander leaves – Few

Method:

Cook the moong dal with 1 ½ cups of water until it is finely cooked. You should be able to mash it lightly.
While the dal is cooking, heat ghee in a wide heavy bottomed pan, add cumin seeds and fry for a minute
Now add curry leaves, onion, salt, green chillies, and sauté until onion turns translucent.
Add zucchini and tomato mix well, add ½ cup of water and let it cook for 5 mins.
Now add sambhar powder mix well and cook until zucchini is done & the raw smell of spice goes off. Adjust water to cook the zucchini.
When zucchini is soft add the mashed moong dal, leave it for two quick boils add coriander leaves and remove from the stove.

Serve hot with rice, chapatis (Indian bread) or rotis.

**Note:
Water should be adjusted according to the consistency you prefer.
Sambhar Powder can be replaced by coriander powder – 1 tsp, red chilli powder – ¾ tsp & cumin powder - ½ tsp.
The salt & spice can always be adjusted according to your taste.
