Strawberry Cupcake

Strawberry!!! I love strawberries in many forms cupcakes, smoothies, with chocolate dip, jam, and of course fresh strawberriesss... Today i'm going to share the cupcake recipe with you. It is made with fresh strawberries incorporated into the cake mixture, then iced with a rich, cream cheese Frosting. Without further intro let me take you through the recipe.

Ingredients

10 large fresh strawberries or as needed
2 eggs
200g caster sugar
75ml vegetable oil
1/2 teaspoon vanilla extract
1/2 teaspoon grated lemon zest
200g plain flour
2 teaspoons baking powder
1/4 teaspoon salt

Cream cheese Frosting:
175g cream cheese, softened
30g unsalted butter, softened
60g icing sugar
1/2 teaspoon vanilla extract

To decorate:
3 large fresh strawberries, sliced

Method:
1. Preheat oven to 170 C. Grease 12 holes of a cupcake/muffin tin with oil or line with cupcake cases.
2. Blend 8 strawberries in a blender until smooth. Distill the puree through a sieve to remove seeds. Puree should equal about 175ml. Set the puree aside.
3. In a large bowl, beat the eggs, then add caster sugar, vegetable oil, 1/2 teaspoon vanilla extract, lemon zest and strawberry puree, beat until well combined. Stir in the dry items flour, baking powder and salt. Mix well until combined.
4. Spoon the cake mixture into the prepared cupcake tin, filling each about 2/3 full.
5. Bake in the preheated oven for 25mins until the cupcakes have risen and a skewer inserted into the centre of a cupcake comes out clean. Allow the cupcakes to cool at least 10 minutes before icing.

6. while the cupcake is cooling you can make the cream cheese icing, beat cream cheese and butter together in a mixing bowl with an electric mixer until smooth and mix in icing sugar and 1/2 teaspoon vanilla extract to make a smooth icing.
7 when the cupcakes are cool Spead the icing on each cupcake and top each cupcake with a strawberry slice.

Hints:
If you would like to add more colour to your strawberry cupcake add 1/4 tsp of red food colour liquid.
